Strawberry-Thyme Tarts

Strawberry-Thyme Tarts

INGREDIENTS

GLUTEN-FREE PASTRY

·                                 1 cup super-fine brown rice flour

·                                 3/4 cup plus 1 tablespoon almond flour

·                                 1/4 cup sorghum flour

·                                 1/4 cup cornstarch

·                                 3 tablespoons unrefined cane sugar, blended

·                                 1/2 cup plus 1 tablespoon cold butter, finely diced

·                                 1 large free-range egg

FILLING

·                                 4 cups strawberries, halved or quartered if large

·                                 2 teaspoons lemon zest, finely grated

·                                 2 tablespoons fresh thyme leaves, roughly chopped

·                                 2 tablespoons pure maple syrup

·                                 1/2 cup almond flour, to sprinkle

·                                 Milk, to brush

HOW TO MAKE THIS RECIPE

1.      Place the flours, cornstarch and sugar into the bowl of a food processor. Pulse briefly to combine. Add butter and pulse until the mixture resembles fine bread crumbs (don’t overprocess at this stage). Add egg and pulse until just combined.

2.     Turn the mixture out onto a lightly rice-floured surface and knead a couple of times until it comes together in one smooth ball. Flatten to a disc, cover with plastic wrap and refrigerate for 30 minutes.

3.    Combine strawberries, lemon zest, thyme and maple syrup in a bowl.

4.     Preheat oven to 350°. Grease a large baking tray or line with parchment paper.

5.                              3 millimeters

6.    Arrange approximately 1/4 cup strawberry filling in the center of the disc. Pull up the sides of the pastry, enclosing the fruit filling. Repeat with the remaining pieces of pastry and filling.

7.    Brush the tops of the pastry with a little milk and freeze the tray for 10 minutes to firm up before baking for 30 to 35 minutes, or until lovely and golden. Remove from the oven and serve either hot or at room temperature. These are best eaten within about an hour of baking, before the pastry softens too much.
