Ingredients
2medium onions, diced
2 zucchini, chopped in half moons
1 yellow squash, chopped in half moons
1 white potato, cubed
2whole tomatoes, diced (or one, 15-ounce can diced tomatoes)
1/2cup parsley, chopped (fresh)
1cup water

Heat oil in a large skillet over medium high. Add onion and saute until translucent.

Add zucchini and squash, browning lightly.

Add potato, tomatoes, parsley, and water.

Cover and simmer for 15 minutes or until all vegetables are tender and water has absorbed.

Serve immediately.
